I used to skip breakfast. Not once or twice a week, but all the damn time. I knew this was definitely not a good for my health, but I thought I had no choice. I was convinced I had no time, however I was very wrong. There are so many quick and easy ways to put something together in the mornings, whether you’re a student or a parent on-the-go. Yogurt parfaits became a quick favourite for my mornings since they are fruit-filled and you can sprinkle them with toppings to kick up the nutrients factor.

My favourite recipe for yogurt parfaits is so simple. It takes three ingredients. I like to add sliced strawberries or diced pieces of mango to strawberry yogurt, then I sprinkle chia seeds on top. I LOVE mixing in the chia seeds and letting the yogurt rest for a while because the seeds expand and become slightly bubbly.

Other fruit you can mix in are:

  • blueberries
  • raspberries
  • peaches
  • bananas
  • dried cranberries

Other non-fruit items you can mix in are:

  • flax seeds
  • granola
  • cereal
  • pecans
  • almond slivers

I have the perfect containers for my parfaits: Pyrex 1 cup glass round dish containers. I make my parfaits fresh in the morning, which literally takes 2-3 minutes, then I place the lid and drop it in my lunch bag. I add a spoon and it’s all read to go when I come into the office in the morning. I enjoy my parfait as I check my email first thing in the AM. It’s the perfect introduction to my day.
